Soup Recipe: Sweet Potato
So today I am trying something new. I love cooking, it’s a big passion of mine and today I am sharing a recipe with you guys. I hope you enjoy it and let me know if you tried it yourself. Note: this recipe is for four people.
What do you need?
– 1 sweet potato
– 1 red pepper
– 2 carrots
– 3 cloves garlic
– 2 red onions
– 4 bouillon cubes (vegetable flavour)
– Parsley (as much as you like)
– 75 ml of water
– A little bit of oil to cook with
– A pan (to cook it in)
– Blender
What to do?
1. Chop all your ingredients. I did cubes but it doesn’t really matter. Put the onion and garlic in a different bowl, the same goes for the parsley
2. Put a little bit of oil, I used a little over a tablespoon. let that sit and then put the garlic and onion in. Let that cook on low heat for 2 minutes.
3. Then add the carrot, pepper, and sweet potato. Give it a good mix and let that sit for about five minutes on medium heat. Stir from time to time.
4. You add the water after that and the bouillon cubes. Crumble them and stir the soup. Let that come to a boil and then put the heat right down and let it slowly boil with the lid on for twenty minutes.
5. Then you get your blender and blend it. Now I put it in my blender which I also use for smoothies and such but mine has a soup setting and can stand heat. So you might want to check with your parents (if it’s their stuff) first if you’re not sure. You can use a hand blender or let it cool off and heat up after blending. (safety first Also don’t blend before you heat it because especially the sweet potato is too hard to blend.)
6. Blend the soup till it’s all soft and a soup consistency.
7. Put it in a bowl or deep plate. Put some parsley on and you are done.
There is your dinner, a healthy winter soup! I hope you like the recipe.
Lots of love, Melissa
